The books that you download will keep their default format no matter what. In other words, when you download a B&N ebook, it will be downloaded as ePub, regardless If you are using Ubuntu, PC or MAC.
Don't expect spectacular sound from an ereader, but most of them, including Nook have an ok sound. Headphones are recommended if you want better or louder sound. Stick to your iPod, is much better and has more functionalities. But you can listen songs with the Nook for sure, is bigger though.
Regarding uploading content, I don't own a Mac but the Nook is basically a Linux device which means, it us usually mounted as an external drive. Most operating systems see ereaders as another drive and then you just drag and drop your ebooks or mp3s.
