I, too, love eggs and toast and farm-fresh IS best. You remind me to go to the farmer's market on Saturday.

On my plate...Well, technically it is in my stomach digesting now are some very nicely done fried catfish, corn-on-the-cob, crawfish pasta, and hush puppies. I am soooo full.

Oh, a great way to do eggs and toast is to bake it. I spray a cookie sheet or baking dish (which kind doesn't seem to matter too much), put butter on one slice and put it buttered side down. I butter a second slice and cut a hole in it. I put the second slice on top of the first and crack an egg in the hole. Bake at 400 for about 15 minutes.
