I have very limited vision, so e-ink is invisible to me. With my iPad, I can use white on black background in the dark, the reverse during the day. I can even turn the brightness very low at night and still see the (extremely) large text. Have you tried the black background with your iPod?
EDIT: Also sans serif fonts are easier for me because there is less clutter and more background contrast showing.
