My Mac can read/write MS-DOS format, so that shouldn't be a problem? That's the same as FAT-32 isn't it?

Nope. MS-DOS isn't a 'format'. And you might be better off formatting as FAT instead of FAT32. Plus, junk the 2GB SD card and get an el-cheapo 1 or 2GB one you can find floating around eBay for $5 or so. They tend to work better.

Plus, if you've got any kind of USB2.0 hub between the Cybook and the Mac, take the hub out of the loop. The Cybook works best when it's attached to one of the two primary USB ports. And the Cybook is USB1.1 compatible.
