Select the book, click Edit metadata, Change the author sort field.
If you have multiple books you need to change, select them all then click Edit metadata. This will bring up the bulk editor. Check Automatically set author sort. This will switch the name parts. Click Ok.
In both cases I would try on a select few books to make sure it works like you want before you do your entire library and find out it's wrong.
