I can see where drinking 2-3 liters of coffee a day would give you a headache. But I don't think drinking one cup of coffee over the course of a day will be enough to cause a problem. Unless that is all that she is drinking.
What many of us forget is that we get water through our food as well as through our beverages. That 8 glasses of water a day is suppose to include the water found in the food we eat as well as the beverages we consume.
I get headaches if I don't drink enough water as well. This normally happens on the weekend when my tea consumption drops. I tend to drink a lot of tea at the office. At home I am moving about, doing enough different stuff, that I forget to drink. I am getting better though.
