Basically it's Mobipocket format for Amazon, and ePub for everything else. There are some minor exceptions, but that's basically it.
Note, though, that not all ePubs are compatible with one another. Anyone can "bolt on" their own DRM system to an ePub file, and there are at least three such systems in common use.
