Here is the link to Craig's spec page, and note that it has a link for downloading Android 2.1 image for recovery purposes, so that is another oddity here.

The thing about the link on their page is that it doesn't actually
work. It's just a link back to their homepage.
I'll e-mail the customer service contact I have and see if I can get the update. I'm not sure it's worth it, though. As you noted, it's an older version of Flash, and there's already a Froyo custom build for the tablet (although I haven't tried it in a while).
