Well, it was corned beef, steamed carrots, and *almost* colcannon. I say *almost* because I fry the cabbage in olive oil/butter mix and make regular mashed potatoes, only combining them on my own plate, because Chris won't touch cabbage.

I think this is the best corned beef meal I have ever made - only took me six years to get it right! I'd never had it before I fell in love with a Southside Chicago Irish boy, LOL. Chris made ours the first few years I was here, but since he works second shift, we were reduced to having it on the nearest weekend to St. Patrick's day, which while acceptable, isn't ideal.
Finally I figured out that if I just crockpot the corned beef it turns out tender and perfect, and I've never had a problem with the veggies. Neither of us like them cooked with the meat, so it's all good. I actually usually prefer the corned beef hash that comes after the St. Pat's meal, but this year the beef by itself was pretty darned good!

Oh, and why did I say that it was on my plate? Because the plate's now empty!
