I used to freeze my beans as well and then someone told me that when you freeze the beans the natural oils that give coffee it's taste are somehow broken down. I never freeze my coffee anymore and to be honest, I can taste the difference now.

Unroasted beans will keep a long long time, I think a year or more. Roasted beans on the other hand start to loose their flavor as soon as they are taken from the roaster.
The absolute best coffee I have ever had was coffee roasted and then brewed right from the roaster.
Some people, like local coffee here, add margarine to the beans as they roast them to increase the oils in the beans, making the coffee stronger while not as bitter. Personally I don't care for it much because I can taste the margarine as the coffee is brewed.
