No, I haven't but it would seem to me that the method you are refering to is to determine if the chick is a male or female.

It can be stated however anyone wants to, but sex is an actual act, whereas gender is the sociological, biological idenfication of whether it is a male or female.

When buying plants, you will see it notes that the bush is a male or female, even plugs are identified as male or female.

Society uses the word sex because that was the way it was done years and years ago. On a birth certificate it will ask what sex. That does not mean it is correct. There is a law that says a man can beat his wife a certain number of time. We no longer follow that law because we know present day that is abusive behavior. We still stick to old methods, termionology because it is comfortable. The same as some people state that a reader is wrong, books are to be made of paper, so you can feel it and smell it, that the experience of holding a book is better.
Yet, we have progressed to the point where many of us, me included, now feel that a reader is just as good as a book.

The quote given from the OP was from a time when letter were hand written and delived by means other than electrical, or wireless. It was a method to determine if the sender was male or female; their gender.

We use saying all the time and hardly ever think of it orgin. Where did the phrase "running arould like a chicken without it's head" come from? Or, "grabbed the wrong end of a stick"?
Many do not (I definitely do, I helped to chase those chicken when I was a kid) and I had looked up the other one out of curiousity. Orgins can be quite interesting.
Anyhow, for years mankind has been asking questions of what sex is the baby, but the correct one should be what gender, it was the sex that created that baby.

Enough said, everyone has the right to believe as they want. I just agree with many who see that the word sex means a physical action and gender is the identification of where whatever is being examine is male or female.
