I've salted, smoked, dried, canned and frozen foods my entire life. there is a huge difference following the preserving process as opposed to leaving a raw burger sitting out

It depends on climate conditions. It's not going to happen if you live in a temperate rain forest. However if you had a dry spell with the requisite low humidity it just might. The thinness of the meat does help.
