and I've made copious quantities of venison jerky. this isn't a matter of just leaving out a hamburger patty on the counter and miraculously expecting preserved meat the next morning

Jerky is a little different in that they use smoke and some heat to speed up the dehydration, but dehydration is what preserves the beef in both cases.

I've salted, smoked, dried, canned and frozen foods my entire life. there is a huge difference following the preserving process as opposed to leaving a raw burger sitting out
