The Nook Color is an amazing piece of hardware for the money. The screen is incredible.
Sounds to me like you would not be happy with a Nook. All of the things you listed as negatives, the touchscreen, LCD, and the lack of hardware buttons are the primary features of the Nook Color, and the eInk Nook uses a touchscreen LCD instead of hardware buttons. You should not even consider a Nook, of any kind.
Maybe you can find a good deal on a refurb K2 or K3 until an affordable color eInk comes out in a couple of years.
