The free Calibre recipes provide free content selected by the Calibre recipe author. The subscription based Calibre recipes provide subscription content selected by the Calibre subscription recipe author. The official subscription authors employed by the site to make downloadable ebooks, pdfs, etc. provide the content the site selects to include.
To summarize, the different versions provide content selected by the authors of the different versions. Sometimes they are nearly the same. Sometimes they differ greatly. Sometimes the differences are because the subscription content is behind a paywall. Sometimes the differences are merely because the authors want to show different things. Calibre authors (subscription and free) tend to remove all advertisements. The official subscription authors may or may not remove ads. The few times I've compared, I've been amazed that the Calibre recipe is often the same or better than the official version.
I know you wanted specifics, but those who subscribe probably don't use Calibre, and vice-a-versa, so finding someone who knows the detailed differences may be difficult. If you learn the answer, post it here.
