Why not just remove it from the boot order? That's the first thing I do when ever I do a fresh OS and application install. I don't need the iTunes Helper to run every time I re-boot, or the Adobe mgr, the Apple Mobile Device mgr, or two dozen other 'helper apps' that take up memory. If I want to add tunes to my iPhone, I don't mind waiting the extra 30 seconds it takes to connect, and I appreciate having the extra memory available when I really need it!
