For OS X, one can install any software which one wishes --- indeed, since OS X has opensource at its core, the availability of opensource software is quite good, including non-native software which uses X-Window.
Also, one can install Windows and dual-boot (or use Parallels to allow one to run Windows apps side-by-side w/ Mac OS X apps), or Linux and triple-boot. Moreover, there are a number of emulators available --- there was a story a while back about one computer science researcher who had some really large number of operating systems booting up on his Mac.
