I love eating ratatouille but 'saying' it is even more fun... Rat... Tat... Tooooie!

Eggplants are a very popular veggie here, and zucchini almost rare, so ours is mostly eggplant, onion, and tomato. I love it will extra olive oil (slutty rather than virgin as the olive taste is stronger) over Italian bread!
