The Nook is missing:
- Hardware buttons (you need an app like softkeys or button savior)
- camera
- working bluetooth (maybe later?)
- microphone
- GPS
- some standard android activities (if you stick with stock rooted roms)
The last means that some functions in a few apps don't work. The Nook app for android doesn't work, the Quickdesk app is another that fails, the shortcut picker for launchers doesn't work, some games have bad formating for the Nook screen, and as you noted, hold to cut/paste does not work. Most apps work fine.
There are workarounds for some of these:
Some keyboards, like SlideIT, have cut and paste buttons.

Both softkeys and button savior give you access to recent apps list for fast switching, just like holding the home button on a phone with hardware buttons does.
For putting shortcuts on launcher home screens you can use an app like Desktop Visualizer.
