I can't speak for Spain, but I never order calamari here in Croatia. They often give you the cheap stuff. (By cheap stuff I mean they'll give you European flying squid instead of loligo vulgaris - European squid. They look similar, but the flying squid has tougher meat). They'll tell you that they gave you the good stuff, though, and charge you accordingly! Or, they might serve you imported, frozen squid. Croatian squid is pretty expensive here, by Croatian standards. Similar situation with shrimp.
