I think I'd rather try century eggs. Their kind of disgusting I can accept. But this balut will haunt me when I next eat (normal, freshly cooked) eggs.

Personally, I wouldn't want to eat any organs or blood. Muscle tissue is fine, but why eat the rest?
I suppose it's mostly the presentation and thought of it. It obviously doesn't bother me (much) when it's added to sausages.
