Towards the end of the baking cycle, spray the loaves with a mist of water, let evaporate in the hot oven with the door closed, then spray again. Do this several times. In France, with stone overns, they will spray water onto the stones to create a quick steam bath, and do that several times. I've seen recipes that suggest tossing a cup of water onto the walls of your oven, but' I'd be afraid of warping the metal.

I've tried the spray/misting method and that works pretty well.
