Hola, amigos! We're going Mexican tonight. Fajitas for dinner! Easy and fast to prepare, and really tasty.

Mexican Fajitas (fa-hii-ta)

300-400g beef and/or chicken
1 large onion
2-3 green peppers
Taco sauce
Sour cream

Marinade:
150cc corn oil
40cc lemon juice
2-3 cloves garlic (crushed and chopped small!)
2 Tbs cumin
1 Tbs oregano
1 Tbs parsley
1 tsp fresh ground black pepper (or 1/2 tsp bottled black pepper)
1 tsp salt

Preparation:
1. Mix together marinade
2. Cut meat or chicken in to thin strips and put into marinade
for a few hours
3. Slice onion and green peppers into thin strips

Cooking:
1. Fry onions quickly in a little of the marinade oil until a
little burned
2. Add green peppers and continue cooking for another 4-5 minutes
3. Take onions and peppers out of the pan and put aside.
4. Drain extra liquid from meat or chicken.
5. Quickly fry meat or chicken on HOT fire. When cooked, add
back the onions and peppers and cook for another minute.


We like these served on soft flour tortillas covered with spicy taco sauce and sour cream. I also add in some sliced jalapeno peppers for some extra kick!
