I actually had this happen roughly an hour after I rooted the first time. I really don't know what happened, but I was already at 1.0.1, so there's not much rhyme or reason there. It seems completely random and there's nothing much we can do about it.
Just one of the risks of rooting I suppose. If it does revert again, it will take me less than ten minutes to re-root, and all of my Nookcolor apps are saved to my Appbrain account.
Annoying for sure, but not the end of the world. The benefits of rooting are still worth it.
