You already have seven home screens with HTC Sense (which is what HTC calls their launcher and other tweaks to stock Android). Pressing menu/Scenes will offer you several presets for how to customize them, but you are not restricted to these. Icons, folders, and widgets can be removed by dragging them to the bottom of the screen (as someone already described) or added as has been mentioned. You can also drag them from one screen to another (difficult to describe, but you'll see if you try it). So it's just a matter of deciding on an arrangement that is convenient for you to get to things you use most frequently.

There are other launchers that can be used to change the look and feel, but it would probably be best to familiarize yourself with Sense first. It is often considered to be one of the better of the manufacturer-specific Android interfaces, and might suit your needs just fine.
