I think the number of home screens you have (and you can tell by dragging your finger right or left on the one you see) is based on your launcher. I'm not sure what the stock launcher is, but I know people use lots of different ones. I've changed to Launcher Pro, available free in the market, and it lets me choose, under preferences, anything from 1 to 7 home screens. (I use 3 right now.) If you have any trouble making it open, you can download ANOTHER app called Home Switcher and when you start it you can tell it which launcher you want to use.

I use the different home screens to organize my apps. The "tools" such as Smart Ruler, Color Flashlight, Camera, Calculator, Barcode Scanner, etc., I put all on one screen. My main screen has the stuff I use all the time: Market, Calendar, Calorie Counter, Maps, ColorNote, a shortcut to my favorite Weather page, and my Yahoo mail. The third one is for random stuff that I may or may not decide to keep on a home screen. A lot of apps I don't put on a home screen at all. If I don't use them often it's less cluttered to just open the apps screen and get them from there.
