Let's see, I haven't used the Sense widgets in a long time, but what you want is a widget. Try menu/add or the long screen press, select widgets, and see if anything looks like what you want. There are also a large number of calendar replacements and front ends with their own widgets. (a widget is something you can interact with that sits on the home screen, whereas an icon does nothing but open an app).
For app organizers I would try searching in the Market for "folder", "organizer", etc.
