I deleted the GingerBread.apk file from /system/app using root explorer

then did adb install on the gbkb-en/apk file, (now it actually installed since I was able to delete the file).
then moved the net.thinkindifferent.inputmethod.latin file from data/app to system/app

and voila the GingerBread keyboard actually works!
