To me earthy, in terms of flavors, it is the one underlaying in greens that are rich in potassium (K) like chards, spinaches and the like. It is particularly intense in beets.

Prof, you are very right, earthy is not grassy, not at all. You used it for one of yours oolongs, not long ago. I intend to search for that flavor in mine, but I have not had the occasion yet.
