Assuming that the dictionary currently selected is EN, when reading an English language book, to look-up a French word in the FR-EN dictionary:
HOME -> Settings -> Applications Preferences -> Dictionary -> select FR-EN -> HOME -> Continue Reading -> double-tap on the word
then to revert to the EN dictionary
HOME -> Settings -> Applications Preferences -> Dictionary -> select EN -> HOME -> Continue Reading
or, is there simpler method?

I have just (re-)discovered a quicker simpler method. There are so many useful menu options that half the time I forget they are there!
Double-tap on the word -> tap on the left-hand icon A (to expand the dictionary entry to full page) -> OPTIONS -> Change Dictionary -> select FR-EN -> OK
then, to revert to the EN dictionary
OPTIONS -> Change Dictionary -> select EN -> OK -> X (to return to the book)
