I was wondering about this myself. Looking on Amazon for apps the closest I see are 'apps' that are really documents that allow you to add Notes. It probably works, but doesn't look very easy to use, and isn't a real 'app'.
It seems that without an app the best alternative is to just load a file on your Kindle that contains all the information you want, and to update it using your PC - even exporting from existing contacts/address book apps.
One way is to create a .txt or html file (or even mobi) and then email it to your Kindle each time you make an update - but this will mean you need to delete the old copy since Kindle can't tell its the same document. Alternatively once you connect the Kindle you could navigate to the Kindle's directory and edit it yourself. #
But it might be easiest just to create the document then import it into Calibre, then use Calibre to send the file to your device - it gives you a backup on your PC, but also means you need to edit the copy that Calibre imported into its directory instead of the original file. And if you need to add new entries directly on the Kindle you can add a note and then update the original document later.
Online text editors are another way to go if you're always connected but I haven't tried them outside of a quick test with google docs mobile.
