For the latter, it depends on what app you use to read the document. For PDF files: pdfviewer shows a two-page layout if you dial down the magnification to 50% in landscape mode, but AdobeViewer doesn't go below 75%. For EPUB files: AdobeViewer does a two page layout at low magnification, but fbreader doesn't.
