The ebook requirement makes it hard. Some of the James Herriot are on Amazon in audio, but no ebook I can see.
As a kid I loved "The Silver Brumby" books by Elyne Mitchell, but so far the only audio of the first book I can see is on cassette. A couple of others look like they may be available on CD. I just did a search for another favourite from when I was a kid, books by Joseph E. Chipperfield ("Rex of Larkbarrow" and similar), but none of those seem to be available in ebooks or audio either. I remember enjoying "Hunter's Moon" by Garry Kilworth, but again no ebook.
Things are looking pretty desperate until you remember "The Wind in the Willows" by Kenneth Grahame - just one of the best books ever written AND, believe it or not, available in audio and ebook. ... and this leads to William Horwood's follow-ons, they aren't up to the original but they're not too bad and they seem to be available in audio. Too bad Horwood's other animal books (Callanish, the Duncton Wood series etc) don't seem to be available.
"Watership Down" by Richard Adams is available in Kindle and audio, and if you ever see "Shardik" or "The Plague Dogs" then I'd recommend them too.
That's about as good as I can do off the top of my head.
