My body fluctuates in weight by 5 lbs given the time of day and after which one of my 5 meals I eat.
If you are going to use a scale to gauge weight loss I recommend only stepping on it once a week. I go by cloth measuring tape and big mirror. Make sure that you step on the scale the same time of day and wearing the same clothes (like in your undergarments). You will weigh slightly different at the end of the day than you do at the beginning.
Roughly 3500 calories equal one pound of body fat. Everybody has a certain amount of calories it takes to maintain their current weight. Through exercise or even simply diet 3500 calories out of your life over a period of a few days is a pound of fat lost. Consuming an extra 3500 calories or being less active and not burning what you normally would towards that amount will add a pound of fat.
Fruit and veggies can and will get you fat if you over eat them.
