In the kitchen, anything is fair game. Tonight I used a regular head cabbage instead of a Chinese cabbage to make the Japanese dish 'Buta Kimchee.' (Pork cooked in kimchee.) The two cabbages have very different tastes and they cook down differently too. The result was quite different from traditional, but it tasted good. For food, that's what counts. I will, however, draw the line at putting pineapple on pizza.
