My mother just went to go visit her neice who has a B&N Nook. I asked mom to look at it and try it out. Then she can look at my wife's Kindle 3, and then my Jetbook Lite whenever I get it. From those three maybe we can find the right one for her. Without knowing any better, I wonder if the Nook would be her best bet.
