Rerooting will not help this problem. It's common that YouTube does not work after you root. That's why it either needs to be removed and then installed using the signed .apk file or you need to clear the cache/data.
Try using NOOKcolor Tools which is one of your installed apps (All Settings /Manage Applications). Scroll down to YouTube and select it. Look for Cache and click on clear cache. Reboot. See if that works.
