Most will depend on the application you're using (since they need size changes, superscripting and subscripting, etc.) But there are some simple characters.
Infinity is alt-5: ∞
not equals is alt-=: ≠
pi is alt-p: π
PI is alt-shift-p: ∏
derivitive is alt-d: ∂
and there are others. The Keyboard Viewer is the easiest way to find them all.
