My all time favorite (not) was Spam Sushi. A wedge of Spam on top of a bed of rice, wrapped with a strip of seaweed.
I enjoy a fried Spam sandwich. Sliced thick, fried up so it's a bit crispy on the outside, slathered in deli mustard with thinly sliced onion, and served on fresh rye bread. It's actually good, once every three or four years.
