You probably meant "a (paper) book other than ePub specs themselves". Since ePub is a standard, and specs are freely accessible, I used them as reference material, and the experience wasn't all that bad. The download page is here:

Adobe has provided us with its own EPUB Best Practices Guide which is of interest if you want to ensure that your ePub works well on ADE, the most frequently seen ePub reading software on eInk devices.

These two sources, in combination with Ainsworth's excellent construction guide (present in your list) form a backbone of my reference material for hand-editing ePubs.
