Typically books that take this long have been formatted using MS Word and there is a boatload of CSS styling on each page. Calibre has to sort through it all and it takes a while. I have had successful conversions take as long as 6 hours.

You can check the progress of the conversion by going to jobs in the lower right corner and viewing the details. It may be running slow but it is running. To ensure my computer remains responsive during long conversions I go to Preferences - Behavior and change job priority to "low." Then restart calibre and run the conversion.
