There is a third party program called "iPhone Explorer" that can do this. The iOS file structure isn't very "human friendly" though.

I've done the keyboard thing myself. No workaround necessary. Just plug it into the camera connection kit USB adapter. An error will immediately pop up saying that the device you have attached isn't supported, but just hit "dismiss" and you're free to start typing away.
That said, as I understand some keyboards draw more power than the adapter (or perhaps the aging Dock port itself) can handle and will either not work at all or will cause that error message to constantly reappear. This apparently includes Apple's own wired keyboard... which I guess is why it's not an officaly listed feature. Though running a powered Hub in-between the iPad and keyboard should resolve this issue.
