Tastes vary. Baen sure publishes lots more of what I want to read than does (say) any of the "literary" publishing houses. I'd even argue quite seriously that the bulk of their books are "extremely good" when compared to that lit-ra-chur (and here's the important part)
when measured on what matters to me. This is largely because most modern literature comes up lacking-to-poisonous on attributes I care about. Most professors in University English Departments would probably disagree with me. I think they're mostly smoking crack (deconstructionism, anyone?). But, as always, your mileage may vary. Probably by quite a lot.
As for "intelligent mind-expandingly good science fiction," Baen publish bunches of that, too.
I think that the main thing you're missing is that Baen (the publishing house) and Jim Baen (the editor) have a better record of discovering and developing talent in SF and Fantasy than any other house and editor in the field. Whether that talent is all (or even partly) to your taste is, of course, a completely different question.
