Nope. As the others have said, you can't get a Kindle 3 without WiFi. The only option is to have or not have the optional 3G modem. That is actually a separate board fitted into a slot in the Kindle 3G+WiFi. The Kindle WiFi doesn't have the slot connector populated.

The WiFi controller is actually integrated into the Kindle board inside so can't be removed easily. One of the WiFi antennas is actually part of the main board and the other is connected to the board. I've no idea what would happen if you managed to physically disable the WiFi controller as the Kindle 3 firmware expects there to always be on there. I assume that just turning it off via software wouldn't be good enough for whatever reason you need it disabled?

If you do want to go through with this then find somebody with SMD rework experience and the equipment necessary to do it without damaging the rest of the Kindle. Using a generic hot air gun isn't recommended :P You'll completely void your warranty if you do this and the Kindle may be adversely affected by the missing WiFi however.
