You can create Collections on the PRS505 by
Preferences - Plugins - Device interface plug-ins - SONY - Customize plugin

Then add the fields you want to use for Collections in the bottom box, e.g. tags, series, authors.

This area has recently had a lot of development and many things are possible. See Calibre manual and Sony-specific Tweaks.

I'm afraid I don't know how any of this works if you're using the Sony software as I've never needed to use it.
