this post for a detail of which font does what on the hack side. The default Kindle Sans Serif font is Caecilia (not the condensed one), and you'll find it in linkfonts/backup.
As for the Droid Sans, apparently, there's a bunch of reports of Kinlde really not liking it (among other custom fonts), I'd never heard of the 'everything black' symptom before, usually it's blank/missing fonts, or the Home screen not appearing at all and staying on the Amazon+boy+tree logo, but it does sound like the same issue (Which I can't reproduce on my Kindle >_<").
Using another font and/or using one of the new freetype override setting should 'fix' it.
As for a chinese font, one should be installed with the hack on a K3 (Droid Fallback).
@jeanniespc: If the font hack came from this thread, you shouldn't have to. But if it's *really* old, you might want to do it anyway, to be on the safe side
