This is really a Calibre forum question. But...

For each input conversion option, Hover over it with your mouse.
Balloon help explains more of what each try to do.
Most deal with detecting Paragraph and Scene breaks.

(EPUB) Output options have the same Hover help and deal with look and feel of the final.

Conversions can't be great with a Garbage source.
