When you connect an iThing to the computer and run iTunes, it will appear in the list of sources to the left. (Library, Store, Devices, Shared, Playlists).
When you click on the name of the device the right hand part of the screen will change to show you details about it. There will be a number of tabs across the top, one of which is Photos. You can specify a folder to sync photos from, and whether to sync the entire folder structure or just specific sub-folders.
You don't actually add the photos to iTunes, just tell it where to find them.
