That's because the "Manage authors" function deals with authors after they've been split apart. So if the book was written by "John Smith & Jane Doe" there'll be an entry in Manage Authors for John Smith and another one for Jane Doe. Separately.
Each author has its own independent existence, which is why the Manage Authors window has them shown one at a time. After all, my library contains books by (among others):
Larry Niven
Jerry Pournelle
John Barnes
Larry Niven & Jerry Pournelle
Larry Niven & Jerry Pournelle & John Barnes
So the Manage Authors window has an entry for each individual author, but not for the combinations. Specific books have zero or more authors. Each of those authors appears (alone) in the manage authors window.
