Acrobat reader (Free edition) -> Export Text (gives you text file without images, text flows and is well formatted), then import that to calibre to turn to mobi.

If you have Acrobat PRO you can go -> Export HTML, and then import that directly into calibre. It does a decent job if the images do not contain SEARCHABLE text. If the text is raster, you're fine. The mobi will contain images and proper formatting/tables if you do it this way.

Do not use mobi pocket creator, it uses pdf2html and butchers complex pdfs and destroys tabular formatting
